Ingredients:

  • 1 1/2 cups of Suji (semolina)
  • 1 cup of curd (yogurt)
  • 1 cup of Maida (all-purpose flour)
  • 1 cup of Fit & Flex granola
  • 1 1/2 cups of powdered sugar
  • Oil (as required)
  • Milk (as required)
  • 1 1/2 teaspoons of baking powder
  • 1 teaspoon of essence (vanilla or any flavor of your choice)
  • A pinch of baking soda

Directions:

Preparing the Batter:

  1. Mixing the Wet Ingredients: In a large mixing bowl, combine the curd and powdered sugar. Whisk them together until the sugar dissolves and the mixture becomes smooth and creamy.

  2. Adding the Dry Ingredients: Gradually add the Maida and Suji to the wet mixture. Stir well to ensure there are no lumps and the mixture is smooth.

  3. Incorporating Leavening Agents: Add the baking powder, essence, and a pinch of baking soda to the batter. Mix thoroughly to distribute these ingredients evenly throughout the batter.

  4. Including the Granola: Gently fold in the Fit & Flex granola. This will give the cake its unique texture and added nutrition. If the batter is too thick, add a little milk to achieve a smooth consistency.

  5. Final Touches: Once everything is mixed well and the batter is smooth, pour it into a greased cake mould. Smooth the top with a spatula.

Baking the Cake:

  1. Preheating the Oven: Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit) for about 10 minutes. This ensures the oven is at the right temperature for baking.

  2. Baking: Place the cake mould in the preheated oven. Bake the cake for 20-25 minutes.

  3. Checking for Doneness: To check if the cake is done, insert a wooden pick or a toothpick into the center of the cake. If it comes out clean, your cake is ready. If it has a bit of batter on it, bake for a few more minutes and check again.

  4. Cooling: Once the cake is baked, remove it from the oven and let it cool in the pan. Do not remove the cake from the mould immediately. Allowing it to cool completely in the pan helps the cake firm up and gives it a nice, crunchy texture.
